Bajra and vegetable khichdi

Bajra carries considerably more fibre than rice, and cooked this way it does not feel like a health food, which is the point.

Ingredients

  • ¾ cup bajra (pearl millet), soaked 4 hours
  • ½ cup moong dal
  • 1 cup mixed vegetables
  • 1 tsp jeera
  • ½ tsp turmeric
  • 1 inch ginger
  • 1 tbsp ghee
  • 4½ cups water
  • Salt to taste

Method

Step 1

Soak the bajra for at least four hours — it is harder than rice and needs it.

Step 2

Heat ghee, add jeera and ginger.

Step 3

Add vegetables and stir for two minutes.

Step 4

Add drained bajra, dal, turmeric, salt and water.

Step 5

Pressure cook for six whistles and let the pressure release naturally.

Step 6

Serve with curd, which helps the fibre sit comfortably.

Bajra is warming and traditionally eaten in winter. That is preference, not prescription.

Why it works

Introduce graduallyTwice a week at first. Going from low fibre to this overnight causes bloating and people stop.
Drink more water on bajra daysHigher fibre needs more fluid or it works against you.
