Ingredients
- 1 cup besan
- 2 tbsp curd
- 1 small onion, finely chopped
- 1 tomato, finely chopped
- ¼ cup coriander
- 1 green chilli
- ½ tsp ajwain
- ¼ tsp turmeric
- ¼ tsp baking soda, optional
- Salt to taste
- Water as needed
- Oil for cooking
Method
Whisk besan with curd and enough water to make a smooth, pourable batter with no lumps.
Rest for ten minutes — this makes it lighter.
Stir in onion, tomato, coriander, green chilli, ajwain, turmeric and salt.
Add the baking soda just before cooking if using.
Cook on a medium tawa with a little oil, spread evenly, until golden on both sides.
Add a bowl of curd alongside and this breakfast reaches around 20g of protein.
