Oats and methi chilla

Oats have genuine evidence for lowering LDL cholesterol. Sweet porridge is not the only way to eat them, and for most Indian households it is not the way that lasts.

Ingredients

  • 1 cup rolled oats, coarsely ground
  • ¼ cup besan
  • ½ cup methi leaves, chopped
  • ½ cup curd
  • 1 small onion, finely chopped
  • 1 green chilli
  • ½ tsp jeera
  • ¼ tsp turmeric
  • Salt to taste
  • Water as needed
  • Oil for cooking

Method

Step 1

Grind the oats coarsely — not to a fine powder, as some texture helps.

Step 2

Mix with besan, curd, and enough water for a pourable batter.

Step 3

Stir in methi, onion, green chilli, jeera, turmeric and salt.

Step 4

Rest for ten minutes so the oats absorb the liquid.

Step 5

Cook on a hot tawa with a little oil, spread thin, until golden on both sides.

Rolled oats, not instant. The difference matters here.

Why it works

Beta-glucanThe soluble fibre in oats binds bile acids, so the liver draws on circulating cholesterol to replace them. This is one of the better-evidenced dietary effects on LDL.
Savoury, not sweetSweet oats add the sugar that raises triglycerides. Savoury keeps the benefit without that.
Coarse, not instantInstant oats are processed to cook quickly, which raises the glucose response.
