Sprouted moong salad

Eating this ten minutes before your rice or roti changes how that rice behaves. The order of a meal is one of the few free interventions available.

Ingredients

  • 2 cups sprouted moong
  • 1 cucumber, diced
  • 1 tomato, deseeded and diced
  • 1 small onion, finely chopped
  • ¼ cup coriander
  • 1 green chilli
  • Juice of 1 lemon
  • ½ tsp roasted jeera powder
  • ½ tsp chaat masala
  • Salt to taste

Method

Step 1

Steam the sprouted moong for five minutes if you prefer them softer, or use raw.

Step 2

Combine with cucumber, tomato, onion, coriander and green chilli.

Step 3

Dress with lemon juice, roasted jeera powder, chaat masala and salt.

Step 4

Eat this ten minutes before the main course, not alongside it.
