Buttermilk with roasted jeera

Chaas after a meal is one of the better pieces of traditional Indian food wisdom. Made thin and without ice, it does what people think it does.

Ingredients

  • ½ cup curd
  • 1½ cups water
  • ½ tsp roasted jeera powder
  • A few curry leaves
  • 1 tbsp coriander, chopped
  • A pinch of black salt
  • 1 inch ginger, grated, optional

Method

Step 1

Whisk the curd with water until completely smooth and thin. Thin, not thick — this matters.

Step 2

Dry roast jeera seeds until fragrant and grind fresh. Pre-ground loses most of it.

Step 3

Add the jeera powder, black salt, coriander and grated ginger.

Step 4

Crush the curry leaves lightly and stir in.

Step 5

Serve at room temperature, not chilled.

Why it works

Thin, not thickA thick lassi is a heavy dairy load that can worsen reflux. Diluted chaas is a different thing entirely.
Roasted jeeraTraditionally carminative, and roasting fresh makes a noticeable difference to both effect and taste.
Room temperatureVery cold drinks after a meal are less comfortable for most people with reflux.
