Low-trigger vegetable khichdi

This is not an exciting recipe and it is not meant to be. It is what to eat when your gut is having a bad week and everything else is a gamble.

Ingredients

  • ½ cup rice
  • ½ cup moong dal
  • 1 carrot, finely diced
  • ½ cup pumpkin or bottle gourd, diced
  • ½ tsp jeera
  • ¼ tsp turmeric
  • 1 tbsp ghee
  • 3½ cups water
  • Salt to taste

Method

Step 1

Wash the rice and dal together until the water runs clear.

Step 2

Heat ghee in a pressure cooker, add jeera only — no onion, garlic, tomato or chilli.

Step 3

Add the diced vegetables and stir briefly.

Step 4

Add rice, dal, turmeric, salt and water.

Step 5

Pressure cook for three whistles. It should be soft and slightly soupy.

Step 6

Eat warm, not hot, and slowly.

This is a flare meal, not a long-term diet. Restriction beyond a few days narrows nutrition for no benefit.

Why it works

No onion, garlic or tomatoThese are common triggers in reflux and in IBS. They come back during reintroduction, not during a flare.
Low fat, soft textureFat slows stomach emptying, which worsens reflux. Soft food asks less of an irritated gut.
Warm, not hotVery hot food irritates an inflamed throat and oesophagus.
