Flaxseed chutney

Whole flaxseeds pass through largely undigested. Ground into a chutney podi, they become a daily habit rather than a supplement you forget.

Ingredients

  • 1 cup flaxseeds (alsi)
  • 2 tbsp urad dal
  • 2 tbsp chana dal
  • 4–6 dried red chillies
  • 4 garlic cloves
  • ¼ tsp hing
  • Salt to taste

Method

Step 1

Dry roast the flaxseeds on low heat until they begin to pop. Do not brown them — the oils are delicate.

Step 2

Separately roast the urad dal, chana dal and red chillies until fragrant.

Step 3

Cool everything completely. Grinding while warm makes it pasty.

Step 4

Grind together with garlic, hing and salt to a coarse powder.

Step 5

Store in an airtight jar in the fridge and use within three weeks.

Step 6

Sprinkle a teaspoon over dal, rice or curd at one meal a day.

If you are on blood-thinning medication, mention regular flaxseed to your doctor.

Ground, not wholeWhole flaxseeds pass through the gut intact. Grinding is what makes the omega-3 and lignans available at all.
RefrigeratedFlax oils oxidise quickly at room temperature. The fridge is not optional for this one.
A teaspoon a daySmall and consistent beats a large amount occasionally, which is the usual failure mode with seeds.
