Ingredients
- 1 cup diced cucumber
- 1 boiled potato, cooled and diced, skin on
- ½ cup pomegranate seeds
- 1 tomato, diced
- ½ cup boiled rajma or chana
- ¼ cup coriander
- Juice of 1 lemon
- ½ tsp roasted jeera powder
- 1 tsp olive oil or mustard oil
- A very small pinch of salt
Method
Boil the potato with the skin on and cool it completely. Cooling matters — it raises the resistant starch.
Combine all the vegetables, pomegranate and pulses.
Dress with lemon juice, oil and roasted jeera powder.
Add salt at the very end, tasting first. Most of the flavour is already there from the lemon and jeera.
If you have reduced kidney function, do not raise potassium without your doctor’s advice. For that group the usual guidance is reversed.
