Tempered curd rice

Live cultures are sold as capsules and eaten daily across most of India without anyone calling them that. One preparation rule decides whether the cultures survive.

Ingredients

  • 1 cup cooked rice, cooled
  • 1 cup fresh curd
  • ¼ cup milk
  • 1 tsp oil
  • ½ tsp mustard seeds
  • 1 dried red chilli
  • 1 sprig curry leaves
  • ¼ tsp hing
  • 1 inch ginger, grated
  • 2 tbsp pomegranate or grated carrot
  • Salt to taste

Method

Step 1

Cool the rice completely. Hot rice kills the cultures in the curd, which is the whole reason for eating it.

Step 2

Mash the cooled rice lightly with the back of a spoon.

Step 3

Mix in the curd and milk until soft and loose. It firms up as it sits.

Step 4

Heat oil separately, splutter the mustard seeds, then add red chilli, curry leaves, hing and ginger.

Step 5

Let the tempering cool a little before adding it, for the same reason.

Step 6

Stir in pomegranate or grated carrot and salt.

If you are lactose intolerant, curd is usually better tolerated than milk, but not always. Your own experience is the guide.

Why it works

Temperature decides everythingLive cultures do not survive heat. Curd stirred into hot rice is a pleasant dish with no probiotic value.
Fresh curd, not sourOver-fermented curd is more acidic, which is less comfortable if you have reflux.
Daily beats occasionalGut flora responds to regular intake. A capsule once a week does less than this does daily.
