Turmeric and black pepper preparation

Turmeric on its own is poorly absorbed. Two things fix that, and both are already in most Indian kitchens.

Ingredients

  • ½ tsp turmeric powder
  • A generous pinch of freshly ground black pepper
  • 1 cup milk, or water with ½ tsp ghee
  • 1 small piece of ginger, optional
  • A little jaggery, optional

Method

Step 1

Warm the milk, or the water with ghee, gently.

Step 2

Add the turmeric and whisk in.

Step 3

Add the black pepper — freshly ground, and more than feels right.

Step 4

Simmer on low for three to four minutes. Do not boil hard.

Step 5

Add grated ginger if you like, and a very little jaggery if needed.

High-dose turmeric supplements can interact with blood thinners and affect the liver. Culinary amounts are a different matter.

Why it works

Black pepperPiperine substantially increases curcumin absorption. Without it, most of what you drink is not absorbed.
Fat alongsideCurcumin is fat-soluble, so milk or ghee helps for the same reason.
What it doesThere is reasonable evidence for a modest anti-inflammatory effect on joint pain. Modest is the accurate word, and it is not a substitute for treatment.
